We call our Jin Shi (金絲) “Golden Silk” as it’s made of plump and hairy golden buds and resulting tea liquid is extremely smooth and thick. Dianhong (滇紅) refers generally to Hongcha (紅茶) or red tea that is produced in the Yunnan province. Dian (滇) is abbreviated name for the Yunnan province, and Hong (紅) means red. Using materials from tea trees to make red tea gives richness and complexity, but also can leave too much bitterness. Processing such tea requires great skills and special techniques. Like leaves oxidation / fermentation in wooden boxes. Tea Master that have made our Dianhong created amazing variety of flavors while keeping astringency and bitterness under control.
Our Tea Master have made changes to rolling process and our 2020 Jin Shí is different than 2019. Alluring aroma is full of honey sweetness, delicate malt with touch of chocolate and florals. Liquid is thick and very smooth, very sweet and rich. Typical malty taste for this kind of tea is well balanced and accompanied by fruit and cocoa notes. There is no bitterness or astringency to speak of even if brewed strong, this tea can withstand many infusions.
Tea liquor being soft, nice and easy to drink also brings a lot of comfort and relax, very cosy tea that I can see myself reaching very often for at this time of the year.
