ShuiXian (水仙) is varietal associated mainly with yancha, but it was brought to Taiwan from Fujian very long ago, and here it’s used to make variety of teas. In this case it was processed into oolong tea and then aged in natural storage.
I think it will age beautifully further, but where it is now is one of those spots when everything aligns itself beautifully. Aromas of dried flowers, cacao, raisins, honey and bright wood combine into mesmerizing and warm aroma that instantly brings comfort.
Liquor is very smooth, very thick, sweet and tea taste lingers in the throat long after drinking. Warm and satisfying woody notes are accentuated by creamy chocolate that brings to mind mocha. Later sweet vegetal notes like flower stems or sugar snap peas are starting to shine through.
Very suitably to this tea comforting taste and aroma, tea itself brings deep calmness and happiness to its drinker. Drinking it in my back garden on sunny day I felt like there is nothing more I would ever need to be happy.
