Shan Cha (山茶) or mountain tea is from the indigenous cultivar that is found in the wild mountains of Taiwan. Name Shan Cha was given by Taiwanese People to the cultivar that have formed naturally, there are only few areas where Shan Cha can be found. Tea was processed into black tea giving it very classy and clean black tea taste. Processing is very challenging as tea have very strong characteristics requiring experience to tame its wilderness. When done right though, then it opens up gradually revealing itself in layers of flavors.
Warm, very sweet aroma is bursting with notes of chocolate, honey, caramel, that sweet floral aroma bringing to mind flower meadow full of honey bees on warm day.
Very sweet liquor is smooth, thick and rich, taste starts strongly with caramel like sweet, desert like notes and throughout the session it’s transforming towards more fruity notes dancing in cup with delicate woods and florals.
